These bad boys wanted to keep falling apart on me, but they were so good with the light, airy, sweet pancake exterior, the crisp, refreshing lettuce, and the fragrant pork belly and shrimp. They needed a bit of acidity and it’s hard to tell if the sauce did that, but the prickly pear and guava seltzer I had with them fit the bill for sure.
